One may not build a Sukkah inside of a kitchen that contains a removable roof, being that one is not allowed to leave dirty pots and dishes in a Sukkah, as explained in Chapter 3 Halacha 8C. However, if the area above the sinks etc is not part of the Sukkah at all, neither its walls nor Sechach, then it may be done.
